This Cap Classique Brut Nature by Villiera Wines is a South African sparkling wine crafted according to the traditional champenoise method. It is made from 100% Chardonnay, sourced from organically farmed vineyards in Stellenbosch from the 2020 vintage.
Made with the traditional Cap Classique method (MCC, same as champenoise method), this wine experiences a second controlled fermentation in the bottle and is then aged on the lees for an extended 4 years. This long contact with the yeasts allows for maximum complexity, depth, and refinement, resulting in a dry, precise, and expressive sparkling wine without added sugars (brut nature or zero dosage)
On the nose, it shows rich, creamy, yeasty aromas with hints of toasted bread. The palate is full, with grapefruit and citrus notes and a dry finish. A serious, structured sparkling wine that showcases the potential of South African Chardonnay.
