In the mid-1980s, Jeff partnered with French Champagne specialist Jean Louis Denois, who brought Champagne technique and traditional method expertise to Stellenbosch terroir. Cap Classique: Traditional Method, New World Character

The Tradition Brut is the house workhorse: a non-vintage blend that delivers consistent quality, with crisp apple and citrus notes lifted by a fine, persistent mousse that speaks of careful production. The Tradition Brut Rosé brings Pinot Noir into the picture for a fresh, berry-toned sparkling wine that drinks beautifully on its own or with food, and its salmon-pink colour is stunning in the glass.
For special occasions, the Monro Brut is a vintage prestige cuvée that showcases the best parcels and the best years, offering toasty complexity, biscuity depth, and elegant length. The Starlight is a clever and contemporary addition: a lower-alcohol MCC that proves you do not need high ABV to make a delicious, satisfying sparkling wine. And then there is the Brut Natural, made without any additives, including sulfites, for the purest and most transparent expression of fruit and terroir.
Each wine is bottle-fermented using the traditional method, the same process used in Champagne, with extended lees aging for depth, finesse, and that characteristic creamy mousse. Stellenbosch's Mediterranean climate, well-drained soils, and significant diurnal temperature shifts give the base wines a ripe fruit character balanced by natural acidity, a combination that makes Cap Classique so distinctive and appealing.
